Another thing to consider is that if you are using your launch peel for turning your pizza, you are heating it up. When you try to launch the next pizza, you will possibly have problems because of the heated peel, so try to get a rotating peel like the ones sold by GI metal or the one sold by gozney. Use less flour when stretching your dough, rotate your pizza often and check the base doneness constantly. Using a perforated peel for rotating helps to let excess flour escape. Don’t use sugar, honey or malt in such high temperatures, your dough will burn.
